Quinoa Burgers with Tzatziki

I’m always looking for good quinoa recipes. Quinoa is so diverse but sometimes I have difficulty finding new ways to prepare it. I made these tonight and they were absolutely delectable! Again, I found this recipe on Pinterest, originally from Linda.

 Quinoa Burgers with Tzatziki

These were amazing! I made them with the tzatziki but I think I prefer them without, the sauce covers up the great flavor, but don’t take my word for it.

Ingredients

Tzatziki:

  • 3/4 cup Greek style plain yogurt
  • 3 tablespoons sour cream
  • 1/2 cucumber
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon sugar
  • 1 teaspoon dried dillweed
  • salt and pepper to taste
Quinoa Burgers:
  • 1 cup uncooked quinoa
  • water
  • salt
  • 3/4 shredded cheddar cheese
  • 1/2 cup cottage cheese
  • 1 zucchini
  • 3 eggs
  • 3 tablespoons all purpose flour
  • 2 green onions
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • olive oil

Preparation

Tzatziki: (make ahead)

  1. Peel the cucumber and remove large seeds if necessary.
  2. Grate the cucumber and squeeze excess water out.
  3. Combine ingredients and mix until well combined.
  4. Refrigerate until ready to eat to let the flavors mingle.

Quinoa Bugers:

  1. Heat two cups of water, once boiling add dry quinoa. Cook for 18-20 minutes or until water is soaked up and quinoa is softened.
  2. Grate zucchini and squeeze excess water out.
  3. Combine quinoa, cheese, cottage cheese, eggs, flour, green onions, sugar, pepper, cumin, salt, and garlic powder in a large bowl. Mix until well combined.
  4. Heat a large skillet and pour in enough olive oil to cover bottom of pan.
  5. Use 1/4 cup to scoop mixture and dollop into hot oil. Cook on each side for 4-5 minutes or until brown.

These would go well with a nice spinach salad but we had them by themselves, they have vegetables enough to be a stand alone meal. I hope you like them.
